That use of the dictionary gets far too much attention.

People love categories. It simplifies their life and makes judging people and things easier. Science also likes categories. It makes scientific analysis so much easier as well. So I see gender as a sort of periodic chart of the elements.
Can I be a woman and not be a female?

That use of the dictionary gets far too much attention. As a Science Geek, I LOVE your analogy of describing gender with something like the Periodic Table; It shows the various elements in relation to their different Atomic Weight, and their abilities to react(interact), or not with one another.
